This is an introduction to the most commonly known agave spirits.
This is the perfect session to start if you are a beginner but want to know more about the history and development of Tequila, from its humble beginings to what it has become today.

Session 2: Tequila Mixology - with Julio Bermejo
From the legendary Tommy’s Tequila Bar, 'The Greatest Tequila Bar on Earth' as he refers to it, Julio Bermejo shares his knowledge and passion for an Agave filled bar creating amazing cocktails with the help of local legendary bartender Zdenek Kastanek for you to try, sharing their knowledge and passion of all things agave.

Session 3: Extra Añejo for Whisky lovers

Session 4: PRE-HISPANIC DISTILLATION
Traditional agave spirit producers living around the Colima volcanoes in Western Mexico are the successors of a tradition born probably 9,000 BC, when their ancestors incorporated the cooked “hearts” of the maguey plant into their alimentary culture. Jaime Muños share his knowledge and experience on this interesting topic.

Session 5: TERROIR & THE AGAVE
Tomas Estes, creator of Tequila Ocho, a Tequila based on Terroir, talks about the importance of the soil and the climatic conditions that surround them.

Session 6: What Agave is that? Why does it taste different?
Some varieties of agave can take as little as 5 years to mature, others can take as many as 35 years, explore the complex and diverse world of the agave with Juan Jesus Lozoya and Hipocrates Nolasco from the Mezcal Regualtory Council and be surprised.

Session 7: MEZCAL States and regions and types of Mezcal
Durango, Guanajuato, Michoacan, Guerrero, Oaxaca, San Luis Potosi, Tamaulipas and Zacatecas are the states that make up the Denomination of Origin, Mezcal. Juan Lozoya , Hipocrates Nolasco and Esteban Morales will explain some of the differences between states as well as regions within states.

Single Malts have gained popularity world wide and now command high prices but have you ever explored the world of artisenal mescal? Discover the intense and complex nuances of these fine spirits and be surprised.

Session 9: MEZCAL MIXOLOGY
Bar legend, Chef, Mixologist and owner of 400 Coñejos and La Venenosa Raicilla, Esteban Morales Garbi demonstrates the versatility of Mezcal and how to drink it using his expertise with some inspiring cocktails with the help of some local bartending legends.

Session 10: Valley vs Highland Tequilas
The Tequila Valley is the heartland of Tequila; this is where it all started, the Highlands lay some 200 Kilometers to the east on a high plateau. Both are home to some legendary and household families and brand names.

Session 13: RAICILLA - when I see ya!
Raicilla is an agave distillate made in the foothills of Jalisco, it dates back centuries and is different from Tequila.
It is produced within the Denomination of Origin Tequila using a number of different varieties of agaves, Lechugilla, Maximiliana are two of the common agaves used.
Esteban Morales is Secretary of the Mexico Raicillas Promotion Board and has been an advocate for this ancient and artisenal spirit, working with local producers in primitive distilleries from the coast to the mountains. This spirit will blow your mind with its complexitity, variety and versatility.

Session 18: SUSTAINABILITY OF THE AGAVE
Juan Lozoya is president of the ‘Comite Nacional para la Sustentabilidad del Maguey’ an organization that advocates the preservation of sustainable, traditional and quality practices in the industries of agave distilled spirits. Juan talks with Esteban Morales and Sergio Mendoza about the agave landscape and some of the issues concerning it today.
