Julio Bermejo
Tequila Ambassador to the USA, creator of the world famous Tommy’s Margarita, Julio is the Beverage Manager at the Award winning Tommy’s Mexican Restaurant in San Francisco or as Julio describes it “The greatest Tequila Bar on Earth”
He is internationally acclaimed for bringing Tequila to the contemporary bar community.
Julio was awarded the “Lifetime achievement” award for his work with promoting Tequila at Tales of the Cocktail 2014.
Tomas Estes
Founder and owner of Café Pacifico, El Nivel and the La Perla Bars in London and Paris, Tomas grew up in the east side of Los Angeles, California, The second largest Mexican settlement after Mexico City. He went to Amsterdam and started Europe’s first Californian Mexican restaurant/ Tequila bar in 1976. He then went on to open 17 Mexican restaurant/ Tequila bars in 6 countries, mainly in Europe.
Author of the definitive and highly collectible book, ‘’The Tequila Ambassador’’, in 2003 Tomas was recognized by the National Chamber of the Tequila Industry, (C.N.I.T.) as official Ambassador for his promotional work such as tastings, lectures, classes and dinners with tequila around the world. In 2008 Tomas launched his own brand of tequila called "Tequila Ocho", is the first Single Estate Tequila, exploring the idea of Terroir in agave growing.

Sergio Mendoza
Founder and director of Don Fulano Global, Sergio is fifth generation Fonseca family who are mayor agave farmers in the highland region of Jalisco. Together with his uncle Enrique Fonseca, they are responsible for many awarded expressions and projects around guarding traditional production, sustainable development and education. Don Fulano tequila is among these projects.
Esteban Morales Garbi
Esteban is a Bio-Chef and owner of 400 Rabbits Agaveria, in Guadalajara; a venue dedicated to the culture of Mexican agave distillates.
In the last 5 years he has been traveling the state of Jalisco looking for and documenting the great and diverse agave distillate known as Raicilla that he commercialized under the brand of La Venenosa. He is focussed on building this category internationally.
Jacob Lustig
A native Californian, Jake Lustig renovated a Oaxacan mezcal distillery in 1995 which he has since developed into being one of the most ecologically sustainable in the industry. He has developed numerous mezcal and tequila brands, spent over a decade managing Latin American spirits for the world’s largest liquor distributor in the US, and currently runs San Francisco’s 160-year old import-wholesale house, Haas Brothers. Jacob’s Mexican company, Las Joyas del Agave, consists of various projects including the Selección ArteNOM Tequila line, Mexico’s 130 year-old bitter Fernet and Angostura liquors, and the mezcal marks Mina Real Mezcal and Don Amado Mezcal.

Jose Espinoza
A native of Michoacán, Jose Espinoza left home as a young boy for work in the USA. By fourteen years old he had made it to California’s produce fields and by twenty, had started his first restaurant. He has since developed businesses in both Mexico and the US, joining partner Jacob Lustig in agave spirits in the early 1990’s.
